adapt cafe knows how to stay out of its own way. that sounds simple. it isn't. on se milwaukie avenue, where the neighborhood runs quieter than the main drags closer to division or hawthorne, the cafe has built the kind of following that doesn't need much explaining. you either find it or you don't, and the people who find it tend to keep coming back. there's no performance here, no attempt to signal what it is before you've even walked in. the regulars who've made suite 111 a reliable part of their week aren't doing it by accident, they're doing it because the coffee holds up on a tuesday morning just as well as it does on a slow saturday afternoon.
