copenhagen takes specialty coffee seriously, and that's not a recent thing. the city has spent years building a scene where independent shops hold their own against the scandinavian roasters that now export beans globally. doomsday deli sits on guldbergsgade in nørrebro, one of the more lived-in corners of the city, and if you know nørrebro at all, you know it doesn't really tolerate places that aren't pulling their weight. the local standing here is genuine, not manufactured by foot traffic alone. what draws people back to a spot like this tends to be consistency and a certain lack of pretension, qualities that are harder to maintain than they sound. guldbergsgade in the morning is a good place to start.
