eggyolk coffee started in hoan kiem in 2019 with a simple argument: egg coffee doesn't need vanilla or rum to be interesting. their version uses green-chicken egg yolks whipped into a dense, sulphurous foam that sits over robusta espresso, clean and a little funky in a way that actually demands your attention. the arabica underneath comes from their own farm in quảng trị, which matters. they've since spread to saigon and phú quốc. it works because they're not trying to make dessert.
