good coffee in edinburgh's west end takes a bit of knowing where to look. william street is the kind of address that rewards the people who already know it, tucked into EH3 far enough from the royal mile that the tourist trail doesn't really reach it. fox & co. caterers has built something genuine here, the sort of place where regulars clearly feel the difference between stopping in and just grabbing something on the way. you get that sense from how strongly the place is regarded, not from marketing, but from the people who keep coming back. it's not loud about what it does. independent, specific, quietly confident. on a slow morning, william street is exactly the right place to be drinking something made with care.
