molencafe zaanse schans sits inside a working windmill at zaanse schans, the open-air museum district north of amsterdam known for its preserved dutch industrial heritage. the building was milling long before anyone thought to serve coffee in it. the interior follows the structure of the mill itself, so the space does what the space does, not what a cafe designer would choose.
