you'll spot the queue before you spot onsu bakery itself. twenty minutes before they open, people are already lining up for what becomes an hour-long wait at peak times. worth it. the dirty coffee is their signature move, a minus 86 degree creation that's cold enough to make your teeth ache in the best way. but here's the real secret: pair it with their cheesecake. the texture hits different, creamy but somehow light, with that slight tang that cuts through the coffee's intensity. sure, the mushroom toast is solid and those korean-influenced bakes look incredible sitting in their glass case. but you'll be back for the iced coffee and cheesecake combo. it's what separates the tourists from the regulars in this soho madness.
