medellín has a genuinely unusual relationship with coffee. the country grows some of the most sought-after beans on the planet, yet for years the best of it was exported while locals drank something far more ordinary. that's shifted, and pergamino on calle 20 in el poblado sits near the center of that shift. the regulars who've made it a fixed point in their week aren't quiet about it, and that kind of loyalty in a city with no shortage of options says something. if you're somewhere in el poblado and want to understand what colombian specialty coffee actually looks like when it's taken seriously on home soil, this is a reasonable place to start. go in the morning, when the neighborhood is still finding its pace.
