the pour-over is a good place to start at spectra coffee, especially if you're the kind of person who wants to slow down for twenty minutes on almaden expressway without feeling like you have to justify it. san jose's south side doesn't have an abundance of spots where careful coffee work is the whole point, and spectra fills that gap without making a ceremony of it. you get what you came for, the locals clearly know it, and the place has built a quiet reputation that holds up. weekday mornings before the commuter rush are worth considering. so is the cold brew if the california heat is doing what it does.
