the roasting is the whole point here. a lot of coffee shops buy beans and call it a day, but the breaks does the sourcing and roasting themselves, which means what ends up in your cup started as a deliberate decision, not a default. that matters more than people realize. sioux falls doesn't have a shortage of places to get coffee, but a roaster operating at this level on east 12th is a different proposition entirely. the regulars know it, and they keep coming back in numbers that say something without needing to be explained. if you're in the neighborhood or just passing through the 57104, the morning hours are when the roasting operation tends to make itself most felt in the cup.
