35 north coffee takes roasting seriously, and that single-mindedness shows. santa fe runs on tourism and plaza foot traffic, and 60 e san francisco st puts this place right in the middle of all of it, which could easily pull a roaster toward crowd-pleasing mediocrity. it doesn't. what you get here is coffee from a shop that has clearly decided what it cares about and hasn't drifted from it, even with the whole historic plaza humming a few steps away. locally, people know it. that kind of quiet reputation in a city this food-conscious doesn't come cheap, and it doesn't come fast. if you're anywhere near the plaza, the espresso is the right reason to stop.
