
artisan roast has been roasting its own beans long before that became the default move for serious coffee shops. that matters more than it sounds. when a place controls what happens before the coffee even reaches the grinder, you're working with something that has an actual point of view, not just a decent supplier relationship. peffermill road isn't the centre of edinburgh, which probably suits them fine. the kind of attention that goes into sourcing and roasting doesn't thrive on foot traffic and tourist pressure. if you're making the trip out to eh16, go for the filter.
