Peru, Llave de Oro

peru llave de oro is a washed single-origin coffee from peru, grown with caturra and bourbon varietals and roasted by bells beans. the washed process strips away the fruit skin before drying, which tends to produce a cleaner cup that highlights the bean itself rather than fermentation character. despite that, this one leans winey, suggesting a ripe, slightly tart quality in the cup. it suits filter brewing methods where clarity and structure can come through, so a pour over or batch brew will let the winey character show without muddying it. grind medium-fine and use water around 93-96°c.
