single origin filter coffee is probably where you want to start at blue tokai's mohali outpost, especially if you've been burned by bitter, over-roasted brews elsewhere. blue tokai built their reputation across india on sourcing indian-grown beans at a time when most local roasters weren't paying much attention to altitude or processing, and that focus shows. sector 68 in sahibzada ajit singh nagar isn't the most obvious address for specialty coffee, but the regulars here are genuinely loyal, the kind of loyal that comes from consistency rather than novelty. you get the sense this place doesn't need to explain itself. if filter is too gentle for your afternoon, the espresso-based menu holds up just as well, and a cortado is a solid way to end a long stretch on district one.
