Guest Coffee - Guatemala

this is a guest coffee from dnisi, sourced from the huehuetenango region of guatemala, one of the country's highest and most climatically distinct growing areas. the cup moves between floral and sweet, with jasmine and broader floral tones at the top and milk chocolate through to darker chocolate on the finish. it's a well-structured coffee that suits filter brewing, where the floral delicacy can open up clearly. keep water temperature moderate, around 92-94°c, and a medium-fine grind to let both the lighter floral notes and the chocolate body come through without one masking the other.
