Elixir Café de Especialidad - Barrio del Carmen

elixir roasts its own coffee, and that single fact changes everything about what ends up in your cup. this is a specialty roaster operating out of barrio del carmen, one of valència's oldest and most densely layered neighbourhoods, on c/ dels cavallers in the heart of ciutat vella. the combination of in-house roasting and a fiercely loyal following isn't a coincidence. when a place controls the process from green bean to finished drink, there's less room to hide behind branding or atmosphere. regulars here clearly know the difference, and they keep coming back because of it. if you're moving through valència and want to understand what the city's independent coffee scene actually looks like right now, carve out time for a morning visit on dels cavallers.
