evocare coffee roasters takes its roasting seriously, and cali's specialty scene is better for it. this is a roaster with a point of view, the kind of place that decides what it believes in and then builds everything around that decision. if you're coming from outside the barrio, cl. 3 in los libertadores is worth the detour. the regulars who keep returning aren't doing so out of habit, they're doing it because the coffee gives them a reason. roasters at this level tend to attract people who actually want to talk about what's in the cup, not just drink it. plan your visit around a morning filter, when the roast character tends to come through cleanest.
