jones & co knows how to roast coffee, and that's the whole point. wangara isn't a suburb you drift through on a whim, so the people turning up to callaway street are there with intention, and that says a lot about what's waiting for them. you don't make a regular out of someone in a light-industrial pocket of perth's north without getting the fundamentals exactly right, repeatedly. the roasting operation keeps things tight and focused rather than sprawling, which tends to produce better results than spreading attention thin. locals here aren't casual about their coffee, and jones & co seems to understand that. start with whatever single origin is on filter that morning.
