la cabra does one thing better than almost anyone in copenhagen: it roasts its own coffee and sells it on its own terms. that combination sounds simple, but most places compromise somewhere along the line. here, the roasting side and the café side seem to pull in the same direction, which keeps the quality consistent in a way that's genuinely hard to fake. frederiksberg isn't the tourist circuit, and marguerite vibys plads isn't a destination street, so the people who find la cabra tend to actually want to be there. if you're coming in cold, don't overthink the menu. the filter coffee is where a roastery shows its hand, and la cabra's is worth slowing down for on a weekday morning.
