a roaster that actually roasts, right here on route 23 in wayne. that distinction matters more than people give it credit for. most places pull from a distributor and call it specialty; la casa de cabana is doing the sourcing and roasting work itself, which changes what ends up in your cup in ways that are hard to ignore once you've noticed them. the regulars here aren't loyal out of convenience, route 23 is not exactly a destination strip, they're loyal because the coffee keeps being good. if you're heading up from the caldwell or little falls direction, it's worth stopping rather than passing. the espresso is a reasonable place to start.
