Colombia Julián and Yisela Burbano Washed Caturra

this is a washed caturra from colombia, grown by julián and yisela burbano and roasted by north star coffee roasters. the washed process strips the cherry before drying, which tends to produce a clean, defined cup, and that shows here in tasting notes of blackcurrant, red apple, and brown sugar. the fruit character is bright and specific rather than jammy, with a sweetness that keeps things balanced. it suits filter brewing well, where those distinct flavours have room to open up. a v60 or batch brewer at around 92-94°c will give you clarity without flattening the acidity.
