Pavesi Massimo - La Torrefazione

bollate has a roaster that takes the sourcing seriously before anything else hits a cup. pavesi massimo, on via filippo turati, isn't trying to compete with milan's more obvious coffee corridors. it's doing something quieter and more deliberate out in the northwestern suburbs, building a following that keeps coming back because the quality doesn't slip. if you're making the trip from the city, that consistency is exactly what you're coming for. the regulars here aren't casual drifters, they're people who've found something they trust. bollate isn't an accident of a location either, it's where the roastery actually lives, which means what ends up in your cup is as close to the source as it gets. start with whatever's on espresso that week.
