a roaster that actually roasts, in albany. that distinction matters more than it sounds, because wolf road is strip-mall territory, the kind of stretch where you'd normally talk yourself out of stopping. professor java's sits in shopper's plaza anyway, unbothered by the surroundings, and the locals have clearly figured that out. what you get here is coffee sourced and roasted by the same operation selling it to you, which keeps the chain of decisions short and the accountability high. that's not common, even in cities with stronger specialty scenes than albany. the standing the place has built over the years didn't come from location. if you're heading out wolf road for anything else, factor in time for a pourover before you get back in the car.
