tunki is a peruvian coffee roasted by rijo42, sitting on the brighter, more delicate end of the spectrum. expect citrus-forward flavours, lemon and grapefruit upfront with a lift of citrus zest, supported by jasmine and floral aromatics that keep things light and clean. milk chocolate and dark chocolate round the finish, adding just enough body to balance the acidity. because of that floral, citrus character, it responds well to brew methods that preserve clarity, a pour-over or aeropress will let the fruit and florals come through without muddying the cup. grind fresh and use water around 90-93°c to avoid pushing the bitterness forward.
