souter bros. roasts its own coffee, and that changes what ends up in your cup. sterling way sits in edmonton, n18, which isn't the part of london that gets written up in style guides, and that's probably fine by them. what you get here is the kind of focus that comes from not having to perform for a tourist crowd. the regulars who keep coming back to this part of north london aren't doing it out of habit. they're doing it because the coffee holds up. independent roasters at this scale live and die by consistency, and souter bros. has clearly figured that out. if you're heading up to n18, time it for a morning filter.
