you're looking at a roaster that started in izumo city back in 2007, originally under the name iijima coffee, before relaunching as strings coffee roasters in 2014 with a dedicated roastery and shop. iijima-san roasts on a giesen machine from the netherlands, dialing in each green bean individually rather than applying one blanket approach. the shop sits in a quiet residential pocket, easy to miss until you spot the light blue walls and that distinctively crooked ventilation duct. only freshly roasted beans make it onto the shelves. nothing sits around.
