single-origin pour-overs are where t'win coffee tends to shine, so if you're deciding what to order, start there. the east district isn't the most obvious part of tainan for coffee tourists, but chongming road has its own rhythm, quieter than the anping waterfront crowds, and t'win fits that register well. this is a roaster that takes the sourcing side seriously, which you can usually read in how a menu is written when producers and processes get actual real estate on it rather than vague gestures at "specialty." locals clearly agree. if you're in tainan on a weekday morning with nowhere urgent to be, a filter coffee here is a reasonable argument for slowing the whole day down.
