ten cafe higashi-cho roasts its own coffee, and that single fact changes what you're getting into here. fujinomiya sits at the base of mount fuji, a city that draws pilgrims and hikers but doesn't have much of a specialty coffee scene to speak of, which makes finding a roaster operating out of higashicho feel genuinely lucky rather than expected. the menu you're ordering from reflects choices made at origin, in the roast, before anything reaches a cup, so the gap between a good visit and a forgettable one is narrower than at spots just pulling shots from a bag someone else filled. come with enough time to sit. the coffee on filter is the reason to be here.
