The Coffee Collective
you can feel the conviction in a cup from the coffee collective before you even read the label. founded in 2007 by world barista champion klaus thomsen, peter dupont, and casper rasmussen, this copenhagen institution helped teach scandinavia what direct trade actually means: paying well above market rates and publishing exactly what they pay. no vague claims. the roast is light, the acidity is bright and alive, and they roast daily across roughly nine copenhagen cafés, starting from that first spot on jægersborggade in nørrebro.
