the roasting is the point here, not the branding around it. plenty of coffee shops in minneapolis buy beans and call it a day. the roastery on w 54th st actually does the sourcing and roasting work themselves, which changes what ends up in your cup in ways that matter. that kind of vertical focus is rarer than it sounds, especially in a residential pocket of south minneapolis where foot traffic alone won't keep the lights on. the regulars who've found it tend to stay found. if you're in the neighbourhood, the morning hours are the obvious call, when the roasting work from earlier in the week is freshest in the batch.
