
out on the high street in knapwell, which sits a good few miles west of cambridge proper, the toco coffee company is doing something that takes a bit of conviction: running a specialty roastery where you wouldn't necessarily expect one. wood farm isn't a city-centre address, and that distance from the usual foot traffic means the coffee has to do real work. you don't end up out here by accident. the roasting operation is the point, and the standing it's built reflects that focus without any shortcuts. if you're heading out from cambridge on a clear morning, knapwell high street and a filter from the roaster that actually made it is a reasonable way to spend the first hour of your day.
