Roest uses a dual-fan system that cools the previous batch in a separate chamber while the roast chamber heats for the next. you drop beans, they cool in about 90 seconds, and you can start the next roast immediately without waiting. this matters if you're sampling 10 or 20 lots in a session. the trade-off is you're locked into smaller batches (50 to 300 grams), so it's not a substitution for production roasting.

how many temperature probes do these machines have?

the Sample S100 has basic bean and environmental sensors. the L100 adds exhaust, drum, and environmental probes for a total of five, plus two open slots for custom K-type or PT100 sensors if you want to track additional points. all data logs to the Roest web dashboard. first crack detection (via sound) is included on the L100. if you need that level of sensor coverage for research or detailed profile work, the L100 is the model to spec.
