coffee from hawaii: a wholesale guide

The only US state that grows coffee. 100% Kona from the volcanic slopes of Hualalai is the most expensive American origin: smooth, nutty, low-acid, often counterfeited.

hawaii is the only US state that grows specialty coffee. kona, on the big island, is the marquee region. ka'u sits just south of kona; maui has a smaller scene focused on the upcountry slopes; molokai produces a tiny volume of high-altitude lots that occasionally make it to the mainland. everything else you'll see labelled "hawaiian coffee" in a supermarket is a 10% kona blend with 90% commodity from elsewhere — the labelling laws on this are notoriously generous.

the kona coffee belt

kona is a 30-mile strip of volcanic slope on the western side of hawaii's big island. that's the entire growing region. on the cupping table the cup is consistent across the belt: medium body, smooth, low-acid, milk chocolate and macadamia notes, sometimes a soft red-apple finish.

the major sub-zones within kona:

kailua-kona — the coastal town and the centre of the visitor coffee scene. most of the small farms and tasting rooms sit here, along with the older estate names — greenwell, mountain thunder, kona joe.

holualoa — slightly higher elevation, slightly more acidity in the cup. holualoa-kona estates often command the highest prices per pound for 100% kona.

captain cook — south kona, the densest concentration of small specialty farms. micro-lots from captain cook regularly score 88+ at the kona coffee cultural festival cupping.

hilo / east hawaii — not kona, but the big island's other coffee scene. hilo gets more rain, lower elevation, cleaner cups but less of the kona profile.

ka'u, maui, molokai

ka'u — the dark-horse hawaiian origin. ka'u beans cup higher than kona in many head-to-head competitions but command lower prices because of less brand recognition. denser cup, more fruit, sometimes wineier — closer to a strong ethiopian than the kona profile.

maui — kula and ulupalakua estates on the upcountry slopes. small volume, focused on direct-to-consumer through tour rooms. cup profile leans citrusy with stone-fruit notes.

molokai — coffees of hawaii in kualapuʻu is essentially the only commercial estate on the island. low-volume, high-altitude, the lots are mostly snapped up by hawaiian roasters before they ever leave the islands.

what wholesale buyers need to know

100% kona is rare. hawaii's coffee belt produces around 2 million pounds of cherry per year; specialty-grade green is a fraction of that. real 100% kona green is priced in the $35-60/lb range at origin — about 10x what you'd pay for a 90-point colombian or kenyan. minimum orders from estates are usually 100lb (~45kg) and lead times can run 3-6 months at peak season.

kona blend laws. in hawaii a "kona blend" can legally contain just 10% kona coffee. outside hawaii the federal rules are similarly loose. if a wholesale supplier offers "kona coffee" at $15/lb, it's almost certainly a 10% blend. the price is the tell.

certifications. hawaiian coffee is essentially all certified-clean by default — strict pesticide controls on the islands, no shade-grown deforestation issues, low-volume farms. you'll rarely see fair trade certification because farmer pay rates already exceed the fair trade minimum. organic is more common; rainforest alliance is rare.

buying kona wholesale

most kona wholesale runs direct from estate. there's no commodity exchange for hawaiian coffee — every wholesale relationship is direct trade by definition. estate roasters (greenwell farms, kona earth, mountain thunder, hula daddy) sell green, roasted whole bean, and ground in 5lb bags up to pallet quantities.

lead times are fast for an origin — 2-4 weeks for orders shipped directly from a kona estate to mainland US cafés. international orders to europe and australia add 4-8 weeks for shipping.
