ethiopia is the genetic home of arabica coffee, with an estimated 10,000 or more distinct wild and semi-wild varieties growing across its highland regions. the main producing areas are yirgacheffe, sidama, guji, harrar, kaffa, and bench maji, each sitting between 1,400 and 2,200 metres above sea level. rather than named cultivars like bourbon or typica, most ethiopian coffee is sold as regional landrace or heirloom material, meaning the genetic diversity within a single lot is enormous. two processing traditions dominate: washed lots, which are prevalent in yirgacheffe and sidama, produce clean, tea-like cups with floral and citrus character, while natural-processed lots, common in harrar and increasingly across guji, produce fruit-forward, wine-like profiles with berry and stone fruit notes. honey processing exists but is less widespread. harvest runs from october through january depending on altitude and region, with milling and export typically following from december through april. roasters sourcing ethiopian green can expect washed yirgacheffe to show jasmine, bergamot, and lemon, sidama naturals to lean toward blueberry and chocolate, and harrar naturals to present wilder, fermented fruit character.
