you're looking at a roaster that opened in may 2023 on the banks of lake ezu, just outside kumamoto city, founded by kinoshita-san, a former physical therapist whose first sip of specialty coffee genuinely changed the direction of his life. he roasts to order, which means what arrives in the bag is fresh in a way that actually matters. the philosophy is right there in the name: blue has many shades, and so does coffee. kinoshita-san wants kumamoto people drinking specialty coffee every day, not just on occasion.
