Japan, 〒330-0801 Saitama, Omiya Ward, Dotecho, 2 Chome−３５you're looking at the work of daiki hatakeyama, who founded bespoke coffee roasters in saitama in 2016 and has since become one of the most decorated figures in japanese specialty coffee. he won both the japan brewers cup and the hand drip championship in the same year, 2019, then took runner-up at the world brewers cup that same season. the philosophy here is bespoke in the truest sense: roasting and brewing as a dialogue, not a formula. it's serious coffee, but it doesn't feel cold about it.
