Elver Guevara

elver guevara is a washed caturra from cajamarca, peru, roasted by axil coffee roasters hawthorn. cajamarca sits in the northern highlands, where caturra, a natural mutation of bourbon, tends to produce clean, structured cups. the washed process removes the fruit before drying, pushing clarity to the front and letting the bean's character come through directly. expect stone fruit and peach in the cup, with the brightness and cleanliness typical of washed peruvians. this kind of coffee rewards filter brewing, where those delicate fruit tones have room to open up, a v60 or batch filter at around 92-94°c will show it well.
