vergara bros is a washed colombian and brazilian blend roasted by axil coffee roasters in hawthorn. the colombian component comes from huila, a high-altitude region known for clean, fruit-forward cups, and the bourbon varietal adds a classic sweetness to the profile. the washed process removes the fruit skin before drying, which keeps the cup clean and lets the coffee's natural acidity show through. expect grapefruit character, bright and citrusy with a dry, clean finish. it suits filter methods well, where that acidity can be clearly expressed, though a well-dialled espresso will also highlight the citrus edge.
