004B - Static Cherry

static cherry is a panamanian coffee from boquete, roasted by colonna & small's. it's processed anaerobically, meaning the cherries ferment in a low-oxygen environment before drying, which tends to amplify fruit-forward and floral character. in the cup expect jasmine and broader floral tones, clean and fragrant rather than heavy. because anaerobic coffees carry pronounced aromatics, brewing methods that highlight clarity work well here, pour-over or a well-dialled espresso with a longer ratio will let the floral notes come through without muddying them. grind fresh and keep water temperature moderate, around 90-93°c, to avoid pushing bitterness over the delicate jasmine quality.
