trio is a washed blend from colonna & small's, drawing on beans from kenya and colombia, with the colombian component sourced from huila. washing the coffee during processing strips away the fruit skin and pulp before drying, which typically results in a clean, defined cup. expect jasmine and floral characteristics throughout. because the processing keeps the flavour profile precise and delicate, brewing methods that give you control over extraction, such as a v60 or chemex, will serve it well, allowing those lighter aromatic qualities to come through clearly without being lost to excess heat or over-extraction.
