025 - sl-09 washed is a gesha varietal coffee from colonna & small's, sourced from kenya and peru and processed using the washed method. washed processing strips the fruit before drying, which tends to produce clean, clearly defined flavour. expect jasmine and broader floral character in the cup. because gesha is a delicate varietal and washed coffees reward clarity, filter brewing, such as pour-over or aeropress, will give you the best chance of tasting those floral qualities without masking them. keep water temperature moderate and avoid over-extraction to let the lighter aromatic notes come through.
