this is a honey-processed sidra variety from ecuador, roasted by dark woods coffee ltd. sidra is a relatively rare ecuadorian cultivar, and honey processing, where some fruit mucilage is left on the bean during drying, bridges the clean clarity of washed coffees with a little extra body and sweetness. in the cup you get lemon, grapefruit, and citrus zest alongside jasmine and floral aromatics, with honey and honeycomb rounding out the finish. filter brewing, such as v60 or chemex, will keep those delicate floral and citrus characteristics clear and distinct.
