koon coffee roasting studio takes roasting seriously, and you can feel that in the way the whole operation is built around it. sanchong doesn't get much specialty coffee attention compared to taipei's central districts, so finding a roasting studio out on chongxin road, section 4, matters. this isn't a café that happens to roast on the side. the roasting is the point, and everything else follows from that conviction. if you're making the trip out to new taipei city, it rewards the detour, not because it's a hidden gem or whatever, but because the sourcing decisions and the roast quality are what you're actually paying for. go for filter.
