your cup at mel coffee roasters carries a clear lineage: co-founders masa and rie opened this small nishi ward roastery in 2016, naming it after melbourne, where they first got serious about specialty coffee. masa had already put in time at osaka third wave pioneer mill pour, so he knew what he was doing. mondays the shop stays closed while they roast on a 1968 probat. the beans are available to buy in the tiny store or online, and the whole thing stays deliberately small.
