el jaguar is a washed nicaraguan coffee sourced via direct trade by missing bean botley. the washed process strips the fruit before drying, which tends to produce a cleaner cup, making the blueberry and stone fruit character here more about the bean itself than fermentation. expect a fruit-forward cup with defined sweetness and reasonable clarity. washed nicaraguans like this suit filter brewing, where lower temperatures and longer contact time let those fruit notes come through without bitterness. a pour-over or batch filter at around 93°c is a good starting point.
