you're getting nordic-style light roasts in one of japan's most underrated coffee cities. townsfolk coffee is run by an owner with experience at prolog, the acclaimed copenhagen roaster, and that background shows in the cup: bright, clean, and leaning toward the fruit-forward end of the spectrum. single-origin beans are the focus, and they do wholesale too. if you're passing through kanazawa, a pour over here is the obvious call.
