the YM-15 is ambex's most popular production machine, roasting 3 to 15 kg per batch. with a reported capacity of up to 33 lbs per batch and the ability to run four roasts per hour, it can support a growing roastery doing wholesale accounts or retail. it's still a fully manual roaster with gas flame control and no automation, so your results depend on operator skill and consistency. the machine has been in production for years and many are still running after a decade or more of service, which speaks to its durability under regular use. that said, you're working without the airflow refinement or build precision of machines in the next price bracket. if you're roasting six hours a day multiple days a week, expect to stay on top of maintenance and accept some variability in your roasts.
