hung opened this place in february 2016 and named it after the bos gaurus, a nearly vanished wild gaur, which tells you exactly where his priorities sit. the french villa on the saigon river is all glass and cold stainless steel, more laboratory than cafe, and that's intentional. bosgaurus controls everything from sourcing through roasting, runs almost entirely arabica, and yes, your cà phê sữa đá here is arabica too, which is a real statement in this city. they hosted the vietnam barista championships in both 2016 and 2017. credentials earned, not claimed.
