colombia core is a washed colombian coffee from the cauca region, grown with caturra and typica varietals and roasted to a medium level by carringtons coffee co. the washed process keeps things clean and precise, letting the citrus side come through clearly, expect lemon, grapefruit, and citrus zest up front with milk chocolate and dark chocolate rounding things out toward the finish. at medium roast it sits in a sweet spot that works well across most brew methods, filter brewing will highlight the citrus brightness, while espresso or a moka pot will pull more from the chocolate base.
