this is a guest coffee from costa rica, roasted by dnisi. it sits on the brighter, livelier end of the spectrum, leading with lemon and grapefruit before settling into citrus zest. the finish brings in milk chocolate and darker chocolate tones, giving it a balance between sharp fruit acidity and a softer, richer close. because the roast profile supports both clarity and body, it works well as a pour over to highlight the citrus, or as an espresso to draw out the chocolate depth. grind fresh and use water around 92 to 94 degrees celsius for best results.
