
and then there's hermanos colombian coffee roasters on pancras road, doing what independent roasters do when they actually know their stuff. this isn't someone playing at coffee culture, the beans tell you that straight away. you'll find them tucked into kings cross, where the foot traffic could easily support mediocre coffee, but they've chosen the harder path instead. the colombian focus makes sense here. not because it's trendy, but because they understand how to work with those beans. the espresso pulls clean and bright, with enough body to hold its own against milk if that's your preference. mornings bring the commuter rush, but hermanos handles the volume without cutting corners on extraction times. kings cross keeps changing around them, but some things hold steady. good coffee being one of them. especially when you catch them on a quiet afternoon, steam rising from a cortado.
